I love Madhur Jaffery’s World Vegetarian. It is full of creative and inspiring ideas for every kind of vegetable you can imagine. It also has many recipes for basics, especially Indian basics. It is from this cookbook that I learned how easy it is to make Paneer at home. It is so much better than store bought and so easy!
Paneer
2 quarts whole milk
3-4 Tbs white vinegar
Line a colander with a dish towel or several layers of cheesecloth. Heat the milk in heavy bottomed pot until just boiling. Turn the heat to low and add 3 Tbs of vinegar. The milk should curdle and the curds should separate from a greenish clear liquid (the whey). If this does not happen add an additional 1 Tbs of vinegar. Remove pot from heat and pour mixture into the colander. Gather the towel and twist and ring out as much of the liquid as possible. Put the twisted up disk onto a board in the sink and put another board on top with a 5 pound weight. Let drain for several minutes.
